iNGREDIENTS

  • 2 tablespoons extra-virgin olive oil

  • 1 small onion, diced

  • 12 ounces tomato paste

  • (1) 29 ounce can

  • 2 tablespoons Italian seasoning

  • 2 tablespoons garlic powder

  • 1 teaspoon crushed red pepper (optional)

  • 2 teaspoons brown sugar

  • Salt and pepper to taste

  • For Assembly
  • 2 cups cooked rigatoni

  • 1 cup low-moisture mozzarella cheese, shredded

  • 1 tablespoon Italian seasoning (for topping)

Directions

  • Preheat oven to 350°F (177°C). Spray a 9×13 inch pan with cooking spray. Place cooked pasta in pan.
  • Next, in a large sauce pan over medium-high heat, sauté onion until translucent (about 2-3 minutes).

  • Remove from oven and allow to rest for 10 minutes before serving.
