Avocado Bacon Egg Morning Stack

The Ultimate Bacon, Avocado, and Egg Breakfast Sandwich Recipe: A Modern Classic

Starting the day with a fulfilling and delicious meal is an absolute game-changer. It sets the tone for your morning, provides the necessary energy, and can even boost your mood. For me, breakfast has always been more than just fuel; it’s a cherished ritual. I prioritize meals that are not only nutritious but also incredibly satisfying, using minimal ingredients that cook up quickly. There’s nothing worse than a complicated recipe when you’re rushing out the door!

Before the world changed and “quarantine” became part of our everyday vocabulary, my mornings often began with a delightful trip to my favorite local cafe. It was conveniently located just a block from my home, a true neighborhood gem. My go-to order was always the same: their signature breakfast sandwich, perfectly paired with a steaming hot cup of coffee or their refreshing “tea of the day.” This simple yet perfect sandwich was my secret weapon for jumpstarting my day, ensuring I always started off on the right foot.

The Classic Sandwich That Inspired It All

The breakfast sandwich I adored at that cafe was wonderfully basic, yet profoundly appreciated. It featured two slices of perfectly toasted wheat bread, generously spread with creamy butter. Layered inside were crispy strips of bacon and a perfectly cooked over-easy egg. I particularly loved how the rich, runny yolk would gently spill onto the toast, sometimes even mingling with the accompanying side dishes like home fries or hash browns. For a touch of unexpected sweetness, I’d occasionally dip the edges of my sandwich into a small dollop of grape or strawberry jelly. It was an absolutely divine combination – truly Y-U-M-M-Y!

Life, however, has a way of evolving. I’ve since moved from that beloved neighborhood, and unfortunately, the cafe no longer offers indoor dining, a casualty of the recent global changes. This meant I had to get creative and recreate that cherished experience in my own kitchen. What started as a necessity quickly turned into a passion project. For this recipe, I decided to pay homage to my all-time favorite breakfast sandwich, but with a delightful and modern twist: the addition of fresh avocado.

Ingredients

  • 2 slices wheat bread, toasted and buttered

  • 1 large egg

  • 2 slices bacon

  • 1/2 ripe avocado, sliced

Directions

  • In a large nonstick skillet, cook bacon over medium heat until each side becomes perfectly crispy and golden brown. Remove the bacon from the skillet and place it on a plate lined with paper towels to drain any excess grease. This ensures your bacon remains deliciously crisp.
  • Using the same skillet (you can wipe out a little excess grease if preferred, but a little flavor is good!), reduce the heat to low. Carefully crack 1 egg into the pan and cook until the bottom part of the egg is completely set and white, and you can no longer see the translucent skillet through the egg. If the outer edges start to bubble aggressively, your heat is likely too high – adjust accordingly. Once the white is completely set, gently flip the egg and cook for an additional 45 seconds for a perfect over-easy yolk. Remove the cooked egg from the pan and immediately place it onto one of your buttered toast slices.
  • Now it’s time to assemble your masterpiece! On top of the egg and buttered toast, layer your crispy bacon slices and the beautifully fanned slices of ripe avocado. Carefully place the second piece of buttered toast on top to complete the sandwich.
  • For a classic and satisfying presentation, slice your sandwich on a diagonal. Serve immediately and enjoy every delicious bite!

Notes

  • It is best to use a ripe avocado for optimal creaminess and flavor. A ripe avocado will yield slightly to gentle pressure.
  • For extra flavor, sprinkle a pinch of salt and black pepper on your egg while it’s cooking.
  • Consider adding a slice of cheese (like cheddar or provolone) for an extra layer of richness, melting it on the egg just before flipping.

Why Avocado is a Game-Changer in Your Breakfast Sandwich

Living here in California, avocados are an absolute staple, and it would be a missed opportunity not to incorporate one into this incredible sandwich. This added touch of creamy avocado elevates the classic breakfast sandwich to new heights. Each bite offers a different, satisfying texture and the perfect amount of velvety richness that beautifully complements the other ingredients.

Avocado works exceptionally well in this sandwich because its subtle, nutty flavor doesn’t overpower the bacon or egg; instead, it harmonizes with them, enhancing the overall taste profile. It blends seamlessly, adding a layer of indulgence without being heavy. Beyond its delicious taste and luxurious texture, avocado is a powerhouse of nutrition. It’s packed with monounsaturated fatty acids, often referred to as “good fats,” which are beneficial for heart health and can help keep you feeling full and satisfied throughout your morning.

But the benefits don’t stop there! Did you know that incorporating avocados into your diet can actually help protect your eyes? They are loaded with powerful antioxidants like Lutein and Zeaxanthin, which are crucial for maintaining good vision and reducing the risk of age-related macular degeneration. Now, that’s a huge bonus – enjoying something so incredibly tasty that also offers significant health advantages! It’s an easy and beneficial fat to incorporate into your daily diet, providing a boost of vitamins (like K, C, B6, E, and Folate) and minerals.

Tips for the Perfect Bacon, Avocado, and Egg Breakfast Sandwich

Achieving breakfast sandwich perfection is all about attention to detail. Here are some extra tips to make your Bacon, Avocado, and Egg Breakfast Sandwich truly outstanding:

Choosing Your Ingredients

  • Bread: While wheat bread is my go-to for its subtle nuttiness and fiber, feel free to experiment. Sourdough offers a tangy contrast, brioche adds a touch of sweetness and richness, or even a robust rye for a different flavor profile. Make sure it’s sturdy enough to hold all the delicious fillings.
  • Bacon: Choose good quality bacon. Thick-cut bacon yields a more substantial bite, while thinner slices get extra crispy. For an alternative, turkey bacon can be used for a leaner option, though the flavor will differ.
  • Avocado: The key here is ripeness! A ripe avocado will be slightly soft to the touch but not mushy. It should have a vibrant green interior. Unripe avocados are hard and lack the creamy texture this sandwich needs.
  • Egg: Fresh eggs make a difference. For an over-easy egg with a perfectly runny yolk, ensure your eggs are fresh. If you prefer a firmer yolk, cook it a little longer to over-medium or over-hard.
  • Butter: Don’t skip the butter on the toast! It adds a layer of richness and helps create that golden, crispy exterior when toasted.

Mastering the Cook

  • Crispy Bacon: To get truly crispy bacon, start it in a cold skillet and cook over medium heat. This allows the fat to render slowly, resulting in even crispiness. Don’t overcrowd the pan. For even crispier results, some people prefer baking bacon in the oven at 400°F (200°C) for 15-20 minutes on a rack over a baking sheet.
  • Perfect Over-Easy Egg: Heat control is crucial. Cook the egg on low to medium-low heat. The bottom should set, and the whites should be opaque before flipping. The quick flip and short cooking time on the second side ensure a runny yolk without undercooked whites. For an extra fancy touch, you can ‘baste’ the egg by spooning hot butter or bacon fat over the top for a minute before flipping.
  • Toast Level: Toast your bread to your preferred level of golden brown. A slightly darker toast offers a stronger textural contrast to the soft fillings.

Creative Customizations

This Bacon, Avocado, and Egg Breakfast Sandwich is fantastic as is, but it’s also a great canvas for your culinary imagination:

  • Add Cheese: A slice of cheddar, Swiss, pepper jack, or provolone melted on top of the egg while it’s still in the pan adds incredible flavor and gooeyness.
  • Spice it Up: A dash of hot sauce (like Sriracha or Tabasco), a sprinkle of red pepper flakes, or a pinch of everything bagel seasoning can kick things up a notch.
  • Greens: A few fresh spinach leaves or a slice of tomato can add freshness and a vitamin boost.
  • Sauces: Besides the jelly idea, try a smear of cream cheese, a dollop of chipotle mayo, or even a light drizzle of honey for a sweet and savory experience.
  • Onions/Peppers: Sautéed onions or bell peppers can add an extra layer of flavor and texture.

A Family Favorite, Ready in Minutes

This Bacon, Avocado, and Egg Breakfast Sandwich has undeniably won over my entire family. It’s quickly become a highly requested breakfast, especially on busy weekdays, precisely because it’s such a quick and satisfying meal to prepare before heading out the door. In just about 5 minutes of prep and 10 minutes of cook time, this delicious sandwich can be yours to savor, offering a nutritious and delightful start to any day.

Imagine pairing it with a tall glass of refreshing orange juice, a robust cup of freshly brewed coffee, or even your favorite soothing tea. The combination of crispy bacon, perfectly cooked egg, creamy avocado, and buttered toast is truly irresistible. But I must issue a word of caution: this breakfast might just become your new addiction! Its simplicity, speed, and incredible flavor make it a hard habit to break.

I genuinely hope this recipe brings a little extra sunshine and joy to your morning routine. Don’t be afraid to get creative with this versatile sandwich. Feel free to incorporate any other ingredients or seasonings you might like to try with it, truly making it your own signature creation. After all, the best recipes are often those that evolve with your personal taste.
